Apple Streusel Cheesecake Bars


So my uncle got a new house recently and in his backyard is an abundance of fruit trees! To my luck my grandma keeps dumping tons of apples and recipes from his house at our house and my younger brother would make these delicious treats while I was at work! Heres one of our favorite recipes that he tried! Originally, this recipe was on the food network with Paula Deen, which makes sense why we love it so much!

preheat oven to 350

Crust:

  • 1cup softened unsalted butter
  • 1/2 cup brown sugar
  • 2 cups flour
  • Foil
Line the bottom of a 9x13 pan with foil. Cube the butter and put it in a pastry blender with the flour and brown sugar and blend until crumbly. Press this mixture into the pan and bake for 15 minutes or until lightly golden brown.








Filling:

  • 2 packages of softened cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
Beat cream cheese and sugar together in mixer at a medium speed until smooth. Next, add the eggs one at a time. Add vanilla and mix until combined. 

Pour this mixture over the crust. 



























Apple Topping:

  • Approximately 3 medium sized apples, chopped (we used 5 small apples)
  • 2 T sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
Peal and chop apples into small pieces (think more or less lego sized). Stir together the chopped apples with the sugar, cinnamon and nutmeg. Spoon apple mixture over the cheesecake mixture in the pan.


















Streusel:

  • 1 cup brown sugar
  • 1 cup flour
  • 1/2 cup quick cooking oats
  • 1/2 cup softened butter 
Combine brown sugar, flour, oats and butter and then distribute evenly over the apples. 

Bake for 30 minutes, let cool and pig out!
